For the second consecutive year, Executive Chef Michael Wilganowski of The Osprey at Beaver Creek, A RockResort
, has won the Beaver Creek Master Chef Challenge
, presented by Bon Appétit
magazine. The Iron-Chef-style cooking competition was held on January 26, 2011 at the Vilar Performing Arts Center.
Chef Wilganowski was paired with Joey Companaro of The Little Owl, Market Table and Kenmare restaurants in New York. The team defended Chef Wilganoski's title as they battled against Stephanie Izard (Girl & the Goat) and Jay McCarthy (Beaver Creek Chophouse), Jacques Van Staden (Celebrity Cruises) and Steven Topple (Beano's Cabin), and Jose Graces (Amada, Tinto, Chifa, Distrito) and Marchall Blanchard (D'Oro). Each team was given a surprise ingredient and 20 minutes to create winning dishes. A Bon Appétit
host provided play-by-play coverage while guests enjoyed complimentary sips, bites and samples.
Chef Wilganowski has 14 years experience in the culinary industry. Before starting his tenure as executive chef
at The Osprey in 2008, he oversaw food and beverage operations at Trappers Cabin as executive chef at this private mountain retreat. Previously, he was executive chef of Perry’s Grill and Steakhouse in Houston, Texas, where he fine-tuned his expertise in classic American cuisine with a Mediterranean flare. He also held tenures at Vail Cascade Resort & Spa, Colo., and The Houstonian Hotel, Texas.
The Osprey Lounge
offers a tapas-style menu and a sophisticated urban dining experience served in a world-class mountain setting. Wilganowski’s vision for the seasonal menu creates a global fusion concept that incorporates multi-cultural cuisine and techniques. Dishes utilize ingredients that are sustainable, often organic and locally grown. The restaurant is located in the lobby area and complemented by a hand-selected wine list. Menu items include Fried Avocado and Chipotle Cream, Marinated Ahi Tuna Tostada, Prime Ribeye Cheese Quesadilla and Lobster Nachos.
